Tea Preparation 101
Making a great cup of tea is a result of three major factors:
1. Water, freshly drawn, filtered or soft, and heated to the proper temperature
2. High quality tea, measured out correctly
3. Correct infusion time, by removing your brew from its leaves when ready (oversteeped tea cannot be fixed!)
Generally, the smaller the particle size of the leaf, the shorter the brewing time. Experimentation and experience should be your ultimate guide. Over-steeping causes a bitter brew, and the wrong temperature can either inhibit the release of a tea's liquor or scorch its leaves. Enjoy your tea-time and use your senses to tell you when your tea is ready.
